Cauliflower Cheese A very easy and quick traditional British recipe. Can be eaten alone or served as a side dish, with roast chicken, for example.

1 cauliflower (or brocolli, or both!)
800ml of milk
80g butter
80g flour
Lots of St.Imrei Cheddar!
Cut the leaves off the cauliflower and break or cut it into pieces. Put it into a boiling pan of water for 5 minutes.
Drain off the water and put the cauliflower in an oven proof dish.
Melt the butter in a saucepan and slowly add the flour, stirring quickly. When it begins to turn brown, slowly add the milk, stirring continuously. 'Squash' any lumps and keep stirring as the mixture starts to thicken, about 5 minutes.
Turn off the heat and add 100-150g of grated St.Imrei Cheddar. Keep stirring until it melts in.
Pour the sauce over the cauliflower and scatter over some breadcrumbs.
Bake in the oven for 20 minutes at 220 degrees celcius, until bubbling and crispy on top.
